With all of this triathlon training I’ve been trying to up my water intake because the heat kills. I naturally gravitate to water, I’m not really one of those people that have soda outside of cocktails. One of my favourite ways to up my water intake is by infusing.

I think at this point most people have had spa water and that’s the exact thing I infuse 90% of the time in our house. I just love that combination of cucumber, mint, and lime together. It’s refreshing, light, and satisfying. Which also makes it a lot more easier for me to take in the amount of water I need to keep up with training and the Texas humidity.

Poolside Cocktail for Summer

So naturally for me when I was sipping on a tall glass of Spa Water the other day, I got the bright idea to make a cocktail out of it. It just sounded like it would be the perfect poolside cocktail for summer, right? The cucumber is crisp, the lime is refreshing, and the mint gives it that zing.

See I get these ideas but sometimes my ideas are not always great. I tried to re-create a spa water cooler with spa water and well, it tasted like vodka on the rocks with a hint of something. Needless to say, it was horrible and I’m not perfect.

Lime Juice, Mint, and Vodka

After I found out how much you guys liked my Coconut Moscow Mule, it dawned on me that I could just add cucumber to a mule, muddle the mint instead of just garnishing with it, and I’d have a perfect spa water cocktail. Well, even though I’m not perfect, when I’m right, I’m right. This cocktail is the bomb! Literally. It tastes like you’re doing cannonballs into a pool, it’s that refreshing.

This cocktail is super easy, unlike the Moscow mule we make it in a shaker so we can strain it. You muddle up your cucumber, lime juice, mint, and vodka together in the bottom of your shaker and then strain it over ice into your mule glass. We top it with yummy ginger beer to add sweetness and a little extra kick of spice. Muddling it gives it that spa water taste that you can’t beat. Plus it’s one of those perfect drinks that translates over to being a punch, which makes it a perfect wedding shower cocktail punch. Let’s get into muddling!
